mantra on which 'O ver was conceived. Combining the very best
regional ingredients with traditional recipes, 'O ver will open next
to London's Borough Market in June 2016 and will be the first
restaurant in the UK to use the unique ingredient of Pure Sea Water
in many of its dishes, from their wood fired pizzas, fresh pasta,
homemade breads, Neapolitan street food, fresh seasonal salads, vegan
options and handmade traditional desserts.
Pure Sea Water has multiple health advantages, whilst also
significantly improving the taste and texture of food. Pure Sea Water
contains 40 times less sodium chloride than table salt and boosts the
consumption of 93 trace minerals essential to the human body. Solid
salt leads to a higher consumption of sodium, considered a primary
cause for a number of health concerns. 'O ver has teamed up with the
world leading experts, to ensure impeccable quality. Sea water is
extracted from the purest areas of the Mediterranean, which is then
analysed for quality and naturally micro-filtered without the use of
chemicals before being packaged.
Famed Neapolitan chef, Gugliemo Vuolo introduced the Pure Sea Water
concept to the Italian pizza market, and will be overseeing the
opening of 'O ver. The restaurant's very own pizza chef is Tommaso
Mastromatteo, who is one of only 15 teachers in the world of
Associazione Verace Pizza Napoletana¹, an organisation which
promotes and protects the True Neapolitan Pizza, ("Vera Pizza
Napoletana"), both in Italy and worldwide.
Located in the heart of London's foodie district, 'O ver will offer a
fresh stance on Italian cuisine in the city. Ideal for those looking
for a quick cicchetti at lunch or a more relaxed meal in the
evenings. Menus will boast in season produce which the native
Neapolitan chefs will use to carefully and lovingly create homemade
delicacies from. Alternatively, those in need of an after work drink
or somewhere special for a celebration can take a seat at the vast
marble topped bar and look out across the restaurant whilst sipping
on prosecco, Italian Spritz', organic wines and craft beers.
'O ver offers an 113sqm bar and dining area with 4 metre high
ceilings, creating a vast expanse of light and airiness. Elegant,
minimal chic is the style that has been adopted by renowned designers
- Keller Studio and Quiet Studio. From the ambient lighting and Mediterranean-influenced
accessories to the upcycled furnishings and white Carrara marble
lined bar top. Each and every detail has been scrutinized and applied
with the utmost care to keep in line with the quality of the
ingredients and food produced.
'O ver will deliver the most authentic and traditional
Neapolitan food, set within an ambient and inviting setting, making
for the perfect healthy lunch spot, relaxed dinner with friends and
family or a celebratory drink at the bar. Guests will be in such awe
that some may ask " 'O ver?", which in Neapolitan means
