Patrick Mahler has been leading focus ATELIER cuisine since 2018. His career includes work at renowned restaurants such as Lampart’s and Ecco in Ascona. In 2019, under his leadership, the restaurant was awarded two Michelin stars.

Signature Dishes:

Champignon sauvage | alpine herbs – a miniature appetizer based on wild champignon, filled with finely sliced mushrooms and seasoned with a powder of alpine herbs.
Cabillaud vapeur | fennel | champagne – a delicate, glassy fillet of steamed cod served with pickled fennel, marigold flowers, and a light champagne foam.
Caviar & apple | crème de lait – Golden sturgeon caviar on a brunoise apple base, topped with whipped milk cream.
Tartelette de foie gras | black truffle – a miniature tartlet with foie gras mousse, ganache, and generous shavings of black truffle. A concentrated, luxurious highlight at the start of the evening.

In addition to the wine list of over 35,000 bottles, focus ATELIER places special emphasis on non-alcoholic pairings. They craft their own fermented infusions, tea injections, berry reductions, and seasonal kombucha — each as complex and refined as wine.

Back cocktail: lighter in color, with a dried citrus slice, possibly based on bergamot or a hop infusion.
Front cocktail: a two-layer composition of caramelized apple juice and cold espresso.
