COYA’s signature guacamole made with fresh avocado, lime, chili, and cilantro, generously topped with premium caviar — €105.
Tataki de Salmón Nikkei
Thinly sliced salmon marinated in Nikkei style — a fusion of Japanese and Peruvian techniques — with a sauce made from soy, lime, and aji amarillo. Garnished with caviar, unagi, fresh herbs, and purple basil — €38 per serving.
Taco de Salmón
Mini taco with salmon tartare on a crispy base — often made from nori or rice dough — topped with a creamy sauce (based on mayo or aji amarillo), fresh cucumber, and caviar (salmon roe or tobiko) — €35 per serving.
Ceviche de Lubina Clásico
Classic ceviche made with sea bass — €32 per serving.

An airy cream made from condensed milk and vanilla or passion fruit, whipped with egg white, topped with meringue, crispy biscuit, citrus elements like dried lime and zest, yuzu or mango pearls, and finished with sugar or jelly decorations — €22 per serving.

At the heart of the restaurant lies the bar. And it’s not just any bar — it’s a space where pisco comes alive in dozens of mixes: with passion fruit, lime, mint, spicy chili, or coffee.

A refreshing cocktail made with Pisco 1615, lime, passion fruit, mint, and cane syrup — €26.
