Service at GAIA is a separate form of art. It is so precise, delicate and invisible that it seems that waiters do not walk, but appear. Before you know it, your glass is already full. You mentally remembered that you wanted lemon for the water – and it’s already on the table.

Freshness of products

GAIA Monte Carlo works exclusively with fresh ingredients. Fish and seafood are delivered daily. Vegetables and herbs are seasonal, local or brought from Greece. Each ingredient is carefully inspected by the chef to meet high quality standards. No food is kept in stock – everything is prepared for the guest, based on the order.

Homemade bread

The restaurant makes its own bread. It is baked daily on site – without frozen semi-finished products. There are several types of bread on the menu: classic Greek, with olives, with spices. It is served immediately after baking, warm. This is the basic standard of the establishment, and part of the philosophy: if you can do better, you should do it.

The menu: from classics to author’s interpretations

Here is a true temple of Greek-Mediterranean cooking, where every dish and drink tells its own story. The menu is designed by chefs Izu Ani and Orestis Kotefas, who combine traditional Greek recipes with modern culinary techniques to create unique flavor combinations.
